What is an awesome carrot cake recipe?

I have a fantastic carrot cake recipe. I cannot attest to whether or not it uses less sugar but it is super delicious and extremely moist because it includes lots of pineapple and carrot. We jokingly say it counts as a serving of vegetables although of course that's not really true.
